Quickie Chocolate Mousse

Dessert was cappucino and chocolate mousse. Since I had dried chocolate on my nose when Diane showed up, she already knew I had been sampling the dessert:

Quickie Chocolate Mousse

  • 1 (12 oz) package semisweet chocolate morsels
  • 1/2 cup sugar (I substituted Splenda, no sense killing myself if I don’t have to.)
  • 3 eggs
  • 1 cup hot skim milk (I used Land-O-Lakes lactose-free, fat-free milk. You can’t taste the difference, and the two girls expected that night were both lactose intolerant. Not that it made any difference when I loaded the lasagna up with all that cheese)
  • 2 to 4 tablespoons amaretto or brandy (I used franjelica cuz that’s all I had)
  • Frozen whipped topping (I skipped this part since it didn’t come in any lactose-free variety, but in hindsight I wish I had bought some)

  • Combine chocolate morsels, sugar and eggs in blender. Blend briefly to combine.
  • Gradually blend in hot milk and amaretto. Continue blending at medium speed until mixture is smooth.
  • Pour into demitasse cups, whatever those are. I used tea cups. Chill for 1 hour.
  • Garnish with frozen whipped topping, unless you didn’t buy any when you were at the store like I didn’t.

Serves 8, unless you really like chocolate, in which case it serves 4. I wasn’t sure how this one was going to come out, but oh my goodness it was delicious. I poured it into 5 cups and had to wrestle Diane for the last cup. I got most of it, I think.

After dinner and dessert, we watched “Noises Off” with Michael Caine, Carol Burnett, Christopher Reeve. It’s an old comedy but very highly recommended.
